GORGEOUSLY GREEN GAZPACHO

Try this green-rich version of the summer classic soup – a great alkalizing soup, which will be perfect for a Labor day brunch or dinner.

Serves 4

2 cups chopped Romaine lettuce leaves

2 cups spinach leaves

2 cups chopped tomatoes

2 cups veggie or chicken broth

3 scallions, diced

1 medium cucumber, peeled and diced

1tbsp fresh parsley

1/2 cup sour cream (more to garnish)

1tsp fresh mint leaves

1/2tsp sea salt

1/2 tsp freshly ground pepper

Place the lettuce, spinach, tomatoes, and broth in a blender (you’re in luck if you have a Vitamix because in mine it took 15 seconds to whizz up). Blend until smooth. Pour into a large bowl and add the rest of the ingredients. chill for at least an hour before serving.
